Lots of bonuses last week! I’ve been working on my first few days’ worth of videos for my challenge from Thursday, and Saturday night, Anthony and I made the coconut lentil soup from Crazy Sexy Kitchen for dinner.
It was a hum of different flavors — unfortunately we didn’t have cumin seeds, but rather, ground cumin, so it was a little bit different from the recipe. But it was very filling and it was good! Not in the traditional way that non-vegan soups are, of course, but the coconut provided a thicker texture (rather than it being runny or creamy).
On a similar note, I also have been drinking a green detox smoothie from Be Well Buzz (on Facebook). Yesterday, I threw in half a lemon including the peel (I thought it was too hard to remove), but today we removed the peel and it was WAY better.
Honestly delicious, and went down fast! It’s easy and healthy. I’ve been very energetic all week long — so I can’t pinpoint it to just one thing: getting back on my vitamin regimen, getting plenty of rest, having just finished the Millionaire Mind Intensive, the vegan foods?
I also wanted to let you know about the Crazy Sexy Kitchen Project. This stay-at-home mom has been going through every recipe of the book and blogging about them! Major kudos to her — originally I considered doing something like this, but what with there being 150 recipes . . . it would have been too big an undertaking for me. So, I am super-grateful for her for doing it for us! (I do not actually know her personally, but I think this is pretty awesome.)
